Chicken with coconut milk gravy

Serve:6
1/5 kg chicken
2-3 fresh ginger
2-3 onions, chopped
3-4 lemon grass
6 fresh red chillies, seeded
1 teaspoon ground turmeric
3 cups thick coconut milk
3 -4 strips fresh basil leaves
2 teaspoon salt or fish sauce
Cut chicken into small pieces. Pound ginger onions lemon grass chillies with a morta and pestle add a little oil.
Rub chicken with turmeric until they are coated all over.
Heat oil in a saucepan and fry the ground ingredients over a low heat, stirring constantly, for 15 minutes or until soft and golden.
Add chicken and fry furter 10 minutes.
Add coconut milk and simmer uncovered until chicken is tender
Add pea eggplant sweet basil leaves salt
