2 tablespoon vegetable oil
1-2 tablespoons green curry paste *if you you want red curry, you will use red curry paste
1-2 green chilli, sliced
4-5 citrus leaves
3 cups coconut milk
1 tablespoon fish sauce
2 teaspoon sugar
500 g raw chicken meat,cut into bite - sized pieces
30 g bamboo
or eggplant(aubergine) or pea eggplant
Fresh basil leaves
3-4 citrus leaves
Heat oil a large saucepan, stir - fry curry paste, add coconut milk till bubble, add chicken eggplant basil leaves citrus leaves ( add bamboo shoots if using )
add fish sauce sugar a little water or more coconut milk
simmer abd serve
